One of Spain's most iconic and beloved dishes! Originating from the Valencia region, paella is traditionally made with a combination of rice, saffron, vegetables, and a variety of meats or seafood. We source meat locally from Vermont!
The key to a great paella is getting the perfect crispy layer of rice at the bottom (called "socarrat"), and it's often enjoyed with a glass of sangria, hard cider or a cold beer. The dish takes its name from the wide, shallow traditional pan used to cook the dish on an open fire, paella being the word for a “frying pan” in Valencian/Catalan language. Originally, paella made in Valencia was a lunchtime meal for farmers and farm laborers. Workers would gather what was available to them around the rice fields.
Paella is not only a dish but also a wonderful cultural experience, often shared with family and friends around a table.

The folks from Billings farm in Woodstock are bringing their cheese to the Resort's gift shop. Visitors will be able to sample and learn more about the cheddar made from the Billing herd of over 40 purebred Jersey cows. Cheese will also be available for purchase.
Drawing upon their 150-year tradition of dairy excellence, Billings Farm cheddar is made from 100% raw milk exclusively from the Billings herd of over 40 purebred, registered Jersey cows. The cheese is carefully aged for at least 60 days and contains no additives, preservatives, or artificial coloring.
Billings Farm cheddars carry the coveted “Queen of Quality” label, which certifies that it is a highly-nutritional, premium product made from 100% Jersey milk. Billings Farm is one of only 26 dairy farms nationwide (11 in New England) that qualifies for the “Queen of Quality” distinction issued by the American Jersey Cattle Association.
