Maple syrup on pancakes is great but there is so much more to Vermont’s most well-known ingredient. Laura Sorkin, co-owner of Runamok has been cooking and experimenting with maple syrup for 16 years and has created over 200 recipes for their website. She will share her knowledge in this class where you will make one savory, one sweet, and one cocktail/drink recipe using maple syrup in both big and small ways. Each participant will also receive a complimentary bottle of Runamok’s finest. Learn what hot-shot chefs like Yotam Ottolenghi already know: maple makes everything better.
Roasted Pork (or tofu) and Vegetables with a maple-soy glaze: Once you learn this easy base sauce bursting with umami, you can create endless variations. Sweet. Salty. Delicious.

One of Spain's most iconic and beloved dishes! Originating from the Valencia region, paella is traditionally made with a combination of rice, saffron, vegetables, and a variety of meats or seafood. We source meat locally from Vermont!
The key to a great paella is getting the perfect crispy layer of rice at the bottom (called "socarrat"), and it's often enjoyed with a glass of sangria, hard cider or a cold beer. The dish takes its name from the wide, shallow traditional pan used to cook the dish on an openfire, paella being the word for a “frying pan”in Valencian/Catalan language. Originally, paella made in Valencia was a lunchtime meal for farmers and farm laborers. Workers would gather what was available to them around the rice fields.
Paella is not only a dish but also a wonderful cultural experience, often shared with family and friends around a table.
