Beer Braised Chicken: Chicken simmered to perfection in a hearty beer sauce for a mouthwatering dish that’s sure to impress.
Winter Greens with Maple Balsamic: A refreshing salad of fresh winter greens tossed in a maple-balsamic vinaigrette, highlighting Vermont’s iconic maple syrup. A crisp, sweet, and tangy contrast to the heartier courses.
Chocolate Stout Cake: A decadent dessert that combines the deep, roasty flavors of a Vermont stout with rich chocolate for a perfect winter treat.
Throughout the class, you’ll learn expert cooking techniques, how to pair beers with food, and tips for using craft beer in your everyday cooking. Come ready to cook, taste, and explore Vermont through the flavors of our local brews!
A muti-course family style menu paired with wines from our cellar, and maybe even a cocktail!! As always, this will begin with a reception and continue with a convivial dinner setting followed by dessert.
Arrival will begin at 6:00pm with dinner commencing at approx 6:45 / 7:00pm. We partnered up with Chef Carter Light, a VT native, and a force in his own right. Carter is a dear friend and incredibly talented colleague. The menu will be posted on the bramble website.
Tickets are $88 per person plus tax and gratuity.

SYBlings VOL 1, the band’s eighth full length album will be released on April 4, 2025, on Vinyl, CD, download and streaming, worldwide!
SYBlings VOL 1 was recorded and mixed at The Box in Burlington VT by Urian Hackney, along with additional recording at Lion’s Den Studio in Syracuse NY by Brian Lauri, and it was one of the last albums to be mastered by Lane Gibson at Lane Gibson Studio in Charlotte VT before it closed in 2024. 8 new original songs from Seth, Steve and Alex. A sister album, SYBlings VOL 2 will be released later in 2025. The album’s first single "Sorry Son You’re Wrong Again", will be released in February 2025, keep your ears peeled!

One of Spain's most iconic and beloved dishes! Originating from the Valencia region, paella is traditionally made with a combination of rice, saffron, vegetables, and a variety of meats or seafood. We source meat locally from Vermont!
The key to a great paella is getting the perfect crispy layer of rice at the bottom (called "socarrat"), and it's often enjoyed with a glass of sangria, hard cider or a cold beer. The dish takes its name from the wide, shallow traditional pan used to cook the dish on an openfire, paella being the word for a “frying pan”in Valencian/Catalan language. Originally, paella made in Valencia was a lunchtime meal for farmers and farm laborers. Workers would gather what was available to them around the rice fields.
Paella is not only a dish but also a wonderful cultural experience, often shared with family and friends around a table.
